The batter, the pan, and the right temperature can make or break your pancake. With these tips, you'll bake a perfect pancake every single time.
Anyone who has ever had a pancake fail knows the feeling: batter that sticks, a pan that is too hot, or a pancake that breaks when flipping. The good news is that the perfect pancake is no accident. With the right batter, the right pan, and the right temperature, it almost always works out. In this article, we share our best tips for both the classic thick Dutch pancake and the thin French crêpe.
For Dutch pancakes: whisk approximately 500 grams of flour, a pinch of salt, and 1 liter of milk into a smooth batter, then add 2 eggs. Let the batter rest for at least 30 minutes; this allows the flour and liquid to combine properly, ensuring the pancake bakes more evenly. Prefer thin crêpes? Then use a little more milk so that the batter remains liquid, allowing you to get a thin layer in the pan.
Practical tip: make the batter in a tall jug using an immersion blender to ensure there are no lumps. If it still doesn't work out, simply strain the batter before you start baking.
A pancake pan with a smooth non-stick coating and a low rim is ideal for both pancakes and crêpes. With a crêpe pan with a low rim, you can spread the batter into a thin layer with a spoon and flip the pancake easily. If you want to make several pancakes at once or small pancakes for high tea, a pancake pan with sections is handy: one pan, multiple pancakes simultaneously.

A common mistake is baking on the highest setting. For pancakes, medium heat is usually perfect: the pan is hot enough to cook, but the batter won't burn. Test it with a small splash of batter: if it turns light brown at the bottom in a few seconds, the pan is at the right temperature. If it cooks too quickly, turn the heat down.
Naturally with syrup and powdered sugar, but also: fresh fruit, apple and cinnamon, or a dollop of whipped cream. Prefer savory? Then bacon, cheese, or a spoonful of warm ratatouille taste delicious. And for those who want to go all out, serve a tiered stand full of mini pancakes with coffee or tea—they'll be gone in a flash.
With a good non-stick pancake pan, half the work is already done.
